dinner

this is a subject that is a bit difficult for me.

why?

i don't mind cooking dinner. in fact, i actually really enjoy cooking.

i just never know what to cook for dinner. 

blake and i usually have a few set things we make from week to week 
but i would love to expand our menu.

suggestions? please?!


(now, i do eat gf {gluten free} therefore blake eats gf as well.
have a recipe that isn't gf? send it to me anyway! i'll make the adjustments i need to)


just in case you're like me and need a new recipe for dinner, here is one of my favorite recipes to make that is fairly easy and very delicious!


Thai Chicken Curry in Coconut Milk

Ingredients

  • 1 tablespoon vegetable oil
  • 1 teaspoon curry paste
  • 1 1/4 pounds skinless, boneless chicken breast meat - cut into strips
  • 1 onion, coarsely chopped
  • 1 red bell pepper, cut into strips
  • 1 tablespoon grated lemon zest
  • 1 cup light coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lemon juice
  • 1/3 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large skillet over high heat; heat the curry paste in the oil about 30 seconds. Add the chicken and cook another 3 minutes. Stir in the onion, bell pepper, lemon zest, coconut milk, fish sauce, and lemon juice; bring to a boil; cook until the chicken is cooked through, 5 to 7 minutes. Sprinkle cilantro over the dish; stir. Serve hot. {serves 4}

  1. I agree. Knowing what to make is the hardest! This year I have started something new. I'm actually in the process of doing it right now: I plan out 12 meals for the entire month on the first of the month--4 meals per week. I find that by the time we have leftovers and eat out a couple times, this is plenty for the two of us. Then I do all the grocery shopping for the month that first week except for fresh produce. I shop for the produce at the beginning of each week. Then I have four planned meals each week! I get lots of mine from Rachael Ray...
